The only real secret to good home brew is clenliness & patience.
I have been a brewer for 26 years. I have made just about all the brews available and tried all of the boosters, additives etc....made good ones and sh&t ones too.
I do not use sterilizers, just boiling water.
I brew with filtered water ie the stuff you buy in 15ltr bottles for your cooler.
A fast EVEN ferment will give the best and most consistent results.
I now make Coopers draught with 600g of SUGAR no flash stuff, and get good consistent brews which I find enjoyable.
Main points:
*CLEAN THOUROUGHLY your equipment and bottles.
*Look to keep the frement at about 27 deg for the entire process.
*Ensure that the ferment is complete ( you will learn to recognise the look of a completed ferment without a hydrometer in time.....it will clear out from the top and be very still) then wait a further 24 hours before bottling.
*Store your bottled beer protected from light and at around 25 deg if you can. This will aid the secondary ferment in the bottle which carbonates ( gases) the beer.
*I recomend a month minimum before drinking. (I have some beer that is several years in th bottle...it gets better with age.
